My history and memories at UVA Wine Bar go back years. I’ve had future lovers confess their deepest feelings, bonded and talked dreams with new friends, and revived my love of radishes while sitting on their bar stools. It’s the perfect “hidden” central bar in downtown Vancouver. Get behind the bar with bar manager, Evelyn Chick.
Where do you bartend?
UVA Wine Bar, Vancouver
Describe the energy and vibe in the bar you work in.
UVA is a sexy, fun hidden gem one block from the craziness of Granville Street on the corner of Seymour & Smithe. Red lights, comfy chairs, electro-swing, jazz, great wines, cocktails, cheese & charcuterie. Perfect date spot, place to girl talk over wine, hang with the guys, drink a good old fashioned, or anything you fancy. A mix of regulars and interesting people from near and far, great late night industry spot. (Open til 2am 6 nights a week)
Favourite cocktail on the menu?
Well it’s hard to pick from my own creations. Got to say I love them all.
Most intriguing person who’s ever sat at your bar. Why?
Probably Jim Green, a late political & social activist who always had something amazingly intelligent to say. Yet he is humble and kind. And god, does he know about wines & bourbon! I even created a cocktail for him to celebrate his life.
Best line or conversation overheard at your bar.
Where do I start? Some things just have to remain private. Let’s just say a nice bottle of Pinot Grigio makes for a fantastic tongue loosener.
What have you learned about human nature while working in your profession?
That’s a great question. For me, there are just so many interesting people out there. But once a couple of my cocktails later… I become part psychologist, part entertainer, and a good shoulder to cry on. There is always some good in everyone.
What do you love about your job?
All of the above. Mixing my favorite cocktails, knowing that one sip / a bite of food can revolutionize an experience. Listening to other people’s experiences / stories from the other side of the bar. Good laughs, good people. Really, never a dull moment.
What bar stool do you sit on when not working?
Anyone that’s empty
What’s your dream?
Hit every city & taste fantastic drinks from the other side of the bar. Hopefully get it together enough to open my own one day. (Investors anyone?)
